Situated in the historic Old Town of Tallinn, this bakery is overseen by Francois, a third-generation baker. At its core, Maison Francois is all about 'savoir-faire' and fostering a strong sense of community.
We are seeking talented Sous Chefs to join the Maison François. The Sous Chef will work closely with the Senior Sous Chef to oversee kitchen operations, maintain food quality and consistency, and lead a team of culinary professionals. We welcome candidates with strong culinary skills and a passion for delivering exceptional dining experiences to our discerning clientele.

- Assist the Senior Sous Chef in managing day-to-day kitchen operations, including food preparation, cooking, and plating.
- Supervise kitchen staff to ensure efficient workflow, proper food handling procedures, and adherence to recipes and presentation standards.
- Train and mentor junior chefs providing guidance on culinary techniques, menu execution, and kitchen organization.
- Collaborate with the Head Chef to develop seasonal menus, special dishes, and tasting menus that showcase authentic flavors and innovative culinary concepts.
- Monitor inventory levels and assist with ordering ingredients to maintain freshness and minimize waste.
- Ensure compliance with food safety and sanitation standards, conducting regular inspections of kitchen equipment, workspaces, and storage areas.
- Work closely with front-of-house staff to coordinate food service and ensure timel delivery of orders to guests.
- Previous experience as a Sous Chef or Chef de Partie in an casual dining environments.
- Culinary degree or equivalent certification from a recognized culinary institute is preferred.
- Demonstrated leadership abilities, with the ability to motivate and inspire kitchen staff to achieve culinary excellence.
- Excellent organizational skills and attention to detail, with the ability to multitask and prioritize in a fast-paced environment.
- Effective communication skills, both verbal and written, with the ability to collaborate with kitchen staff, management, and suppliers.
- Flexibility to work evenings, weekends, and holidays as required.
- A passion for culinary innovation and a commitment to delivering memorable dining experiences to guests.
- Medical Certificate for food operators required.
- Minimum age requirement 21 years.
